Salt (Mountain Salt): Our Salt Range is from Khewra Salt Mines, and it is oldest in the salt mining history of the sub-continent. Salt occurs in the form of an irregular dome like structure. There are seven thick salt seams with cumulative thickness of about 150 meters. At places rock salt is 99% pure. Salt is transparent, white, pink, reddish to beef-color red. In certain horizons it is crystalline. Inside the mine there are beautiful alternate bands of red and white color salt. There are 18 working levels. Cumulative length of all drivages is more than 40 km.

Star aniseed (Badyan Phool): Star anise is the fruit of a small evergreen tree native to Asia. These star shaped fruits are picked right before ripening and dried before use. Whole Broken Pieces or Ground Star Anise are practical for cooking purposes. The broken pieces will give you the same flavor at a third of the price of the hand-selected variety. The flavor of star anise also lends itself nicely to many fish dishes. The primary use of star anise in Chinese cooking is in its ground form, as an ingredient of Chinese Five Spice Powder. The Japanese like to burn the powder as incense in temples; you can scent your own home in the same manner. It is also used in many Asian dishes especially in Birayni and Pulao .

I will try to explain several different kinds of sugar so you can make up your own choice. Whatever you choose to eat, I don't recommend substituting wet sugars (like maple syprup) for dry granulated type sugars in any recipe.
